"A shop that sells you what you need"

I am a regular customer of Howes; it is my favorite bike shop in Cambridge. They're happy to sell you the bits and bobs you need to keep your old bike going rather then trying to get you to buy a new bike. They are also honest when the part you're looking for is no longer made, and they then suggest the minimal replacements you need to get your bike back on the road. They can be a bit cool at times, not overly friendly, but if you ask for help they will do their best to get you what you need. I rarely shop mail order. Instead I simply ask them to order in anything I need, as with my 10% discount by being a member of the CTC, it's usually about the same price or less. I also like Ben Haywards, but that shop is ususally too busy for me to get esoteric advice that I'm looking for.
